Easy Ratatouille Recipe

  1. Chop all veggies (eggplant, zucchini, tomatoes, bell pepper) into 1-inch pieces. Finely chop onion and garlic.
  2. Heat oil in a skillet over medium heat, add onion, and sauté for 4-5 minutes until lightly browned.
  3. Add garlic and eggplant, cook for 3-4 minutes, then add wine or broth and all spices. Simmer on low-medium heat for 5-6 minutes, stirring occasionally.
  4. Add remaining ingredients (except tomato paste and balsamic vinegar) and cook for 10 minutes or until veggies are soft. Add more wine or broth if needed.
  5. Add tomato paste and balsamic vinegar (more for a thicker sauce). Stir and adjust seasoning.
  6. Enjoy! Serve with bread or rice.
