Easy Ratatouille Recipe

- Chop all veggies (eggplant, zucchini, tomatoes, bell pepper) into 1-inch pieces. Finely chop onion and garlic.
- Heat oil in a skillet over medium heat, add onion, and sauté for 4-5 minutes until lightly browned.
- Add garlic and eggplant, cook for 3-4 minutes, then add wine or broth and all spices. Simmer on low-medium heat for 5-6 minutes, stirring occasionally.
- Add remaining ingredients (except tomato paste and balsamic vinegar) and cook for 10 minutes or until veggies are soft. Add more wine or broth if needed.
- Add tomato paste and balsamic vinegar (more for a thicker sauce). Stir and adjust seasoning.

- If you don't like some spices (e.g., oregano), leave them out or replace them with fresh basil.
